I have no idea what to call this but it turned out pretty good and is really low calorie per serving.  As with all good ideas it was born from "I don't want to go to the store" and "lets see whats in the pantry that I can turn into something".

Ingredients:

1 ½ cups barley
3 1/3 cups water
1 small can of tomato paste
1 can diced tomatoes
1 TBS of Italian herbs
2 TSP of Salt
2 chicken breasts

Start by cook chicken breasts any way that you want to.  You will be slicing them into thin strips when they are done.

Bring  water to boil in a separate pot.

Add barley to cooking pot and cook for 12 minutes.

Add tomato paste and diced tomatoes to cook pot.

Mix well.

Add Italian Herbs and Salt to cook pot.

Mix well.

Add chicken and mix again.

If needed, add a splash more water to pot to keep barley from sticking to pot.

Continue to cook for a couple minutes and serve hot.

Add salt and pepper to taste.

Enjoy.
